Broccoli Cauliflower Soup with Feta

Ingredients:
4 large florets of broccoli
1/2 cauliflower
1 c vegetable stock or more
1 onion, chopped
2 cloves of garlic, chopped
1 t turmeric
1 t chili powder
1 t cumin powder
salt and pepper
Large pinch of Feta cheese
sprinkle of paprika
1 T olive oil

Steam the broccoli and the cauliflower. I used the steamer basket in the rice cooker for 10 minutes with 3 cups of water in the bottom.
Heat olive oil in a pan.
Add the onions and the garlic.
Cook the onions until translucent.
Add the cumin, turmeric and chili powder. Stir.
Place the broccoli and cauliflower into a food processor.
Set on low.  Add the onions.
Add the vegetable stock slowly and carefully. Add more if you like it runnier.
Return the soup to the pan.
Add salt and pepper to taste.
Heat and stir.
Ladle the soup in a bowl. Sprinkle Feta cheese on top. Then add paprika for colour.
Enjoy.

I used purple cauliflower so the soup colour was darker than expected.  Very tasty and very filling, yet light.  I didn’t even have a side of toast with this.  Just ate it on it’s own.

The race is on.  The challenge is afoot.  DH and me are competing in the best possible friendly way to lose weight together.  I jumped on the scales on Sunday and I was winning. Yay yay! Today I’m second.  Yay. This is the only race where the lower score wins.  I have lost three and a half kilograms already.  In visual terms that is 7 packs of butter.  Excellent news.  One and a half more kilograms and I will have reached my first personal challenge.
